La Toscane sits in the middle of 10 acres of pine trees, oaks, rosemary and wild thyme. While you are here, why don't you pick some of the thyme and enjoy the flavour it adds to food.

When picking our thyme, never uproot the plant. Instead, cut the stems with shears or break them off with your fingers. Do not cut all the stems of one plant - only clean up the plant.

Since Provence is a hotbed of the Knights of Templar history, we thought you would be interested to know about a connection between thyme and knights. In medieval times, women would often give knights and warriors gifts that included thyme leaves. Thyme was thought to bring courage to the bearer. It was also used as incense and placed on coffins during funerals in order to help passage into the next life.
